Fresh and Light New Year

The Holidays are all about indulgence - decadent desserts, rich foods, and tempting treats. After the Holidays our bodies are telling us to back away from the buffet and take it easy! When resolutions are in full swing and everyone is on a new diet or fitness regimen, entertaining for friends can be somewhat challenging. Guests will shy away from luscious mashed potatoes (just last week they would have asked for seconds...) and turn down dessert. Do your friends a favor and host a healthy and fresh dinner that will not send their resolution into the dumps.
This Dinner Party Menu is the perfect solution to a dreary winter day... it is light and fresh - even down to the flowers! For the entree, Scallop & Shrimp Parchment Packets are healthy and full of flavor. They can be made in advance, then baked in the oven just before dinner. The individual servings wrapped in parchment paper are so much fun for a party - everyone gets their own! For dessert, the light-as-air Clouds floating on Vanilla Bean Cream topped with fresh blackberries will send your guests soaring. Set the table light and bright, too, with a box of planted paperwhites. They'll bring a fresh feeling to your entire home.
Scallops & Shrimp Parchment Packets
- 1 pound of Bay Scallops
- 1/2 pound of large jumbo shrimp
- 8 small purple potatoes, sliced
- 4 cloves of garlic, minced
- 4 tablespoons of butter
- Sea Salt & Cracked Pepper
- 1 lemon, sliced
- 4 squares of parchment paper (10 inch squares)
Cut the potatoes into thin slices. Cook them for 3-5 minutes in a pan of salted boiling water. Remove them from the water.
On each square of parchment layer in the following order : potatoes, shrimp, scallops, garlic, butter, salt & pepper, lemon and chives. Fold in top and bottom sides of the parchments, bringing them together, then folding them down. Fold each side under. Tie with twine and place on a baking sheet.
Bake at 400 degrees for 20-25 minutes, depending on the size of the shrimp and scallops.
